An imperishable (long shelf life), sensorily acceptable meat preparation is described for human consumption free from chemical preservatives, in particular for use in meat-containing bakery products and as a filling for long-life bakery products, the water activity of which is below 0.7, the meat preparation being microbiologically stable and exhibiting sensory acceptance such as low toughness and good chewing properties both before and after a baking operation. With regard to the production process, it is described that meat is cut into small meat pieces, that the meat pieces are coated with a concentrated treatment solution having a relatively high dry matter content, that the meat pieces are removed from the treatment solution and are supplied as a meat preparation for further use, in particular in bakery products.
