Technique for Producing Cheese SlicesAbstract of the DisclosureA technique for producing sliced, shreddedand/or diced cheese of the pasta filata type. Thetechnique utilizes a plurality of rollers which reducean extruded strand of cheese to a ribbon of the desiredthickness. The rollers are heated and a spray of warmwater is applied to the cheese to keep the ribbon plas-tic and pliable. The edges of the sheet are trimmed,and then the sheet is run through a brine tank orsprayed with a brine mixture to salt the sheet for thedesired amount of time. Thereafter, the sheet iscooled and cut into any desired shape to create an endproduct of controlled size and weight. The trimmingsare returned to the extruder, reheated, and reused.
