The invention relates to a process and device for precooling meat joints and/or dressed carcass meat. The carcasses or carcass pieces are cooled in a first cooling section (I) by the circulation of fresh air fed from outside when the air temperature is below approximately 15@C; at higher air temperatures, the fresh air cooling is combined with an artificial cooling or only artificial cooling is used. The carcasses or carcass pieces are wetted at intervals and the moisture is evaporated in the intervals between the moistening operation. In the second section (II), only artificial cooling is employed, but the cooling space is flushed through at intervals e.g. at a frequency of 30-60 sec/h and as result mould growth is prevented and the bacterial count is kept to a low level.
