PURPOSE:To exhibit sterilizing effects by heating and ultraviolet rays by irradiating a packaged material of raw meat subjected to vacuum packaging with a film packaging material with ultraviolet rays and heating. CONSTITUTION:Raw meat is subjected to vacuum packaging with a heat- shrinkable film having permeability to ultraviolet light. The packed material is irradiated with ultraviolet rays. A dose of ultraviolet rays reached to the packed material is preferably 100-2,000mWsec/cm2 per unit area. Then the packed material is heat-treated at 70-92 deg.C. At least one of hot water bath, hot water shower and spray steam is used as a high-temperature atmosphere.
