PURPOSE:To prepare a Western-style OKAKI (sliced and dried rice cake) having the delicious taste of almond by pounding a mixture of glutinous rice and almond and preparing the OKAKI from the obtained rice cake containing finely divided almond pieces. CONSTITUTION:Steamed glutinous rice is mixed with almond at a ratio of 10:1. The mixture is pounded with a pounding machine and cooled in a flat box. The obtained rice cake is cut into proper size, dried, toasted and then seasoned with a properly seasoned mayonnaise to obtain the objective OKAKI.
