ABSTRACT OF THE DISCLOSUREmethod of cultivating in milk, organisms having a slow growthcapacity, an organism produced according to the method and ediblemilk product containing such organisms produced according to theinvention. In executing the method of bulk starter culture isprepared by cultivating bacteria, for instance bacterial of thestrain lactobacillus acidophilus or any specifies ofBifidobacteria like adolescentis, breve, longum or infantis, orslow growing slow growing species of Streptococcus, whereby milkhaving an additive of growth stimulants is UHT (ultra hightemperature) treated and is cooled to an optimum growthtemperature for the bacterial culture and is inoculated with thebacterial culture, whereafter the culture, is allowed to growuntil the bacterial count is more than 108 per ml. Parallellythereto, a milk medium containing growth stimulants and possiblyan additive of proteins is prepared in a carefully cleaned anddisinfected container, and the milk mixture is UHT treated andcooled to optimum growth temperature for the bacterial culture,whereupon the process milk batch is inoculated with bulk starterculture, whereupon the process milk batch is inoculated with bulkstarter culture in growth phase in an amount of 2.5-25% orpreferably 5-20%. The culture is allowed to grow at optimumtemperature until the bacterial count is more than 108 per ml,whereupon the process is broken and the product is cooled andpacked.
