Is used a starting material rich in cell walls in the divided state, water is added if necessary, to obtain a mixture capable of undergoing the subsequent shearing treatment, and subjecting said product to a extrusion before shear to obtain a product modified to contain a water-soluble polysaccharides fraction higher than that existing naturally, without alteration of the overall chemical composition, the said modified product being in the form of aggregates which can be ground, and said modified product is subjected to an aqueous extraction to recover a soluble fraction and an extraction residue. If the starting material is derived from naturally pectin-rich higher plants, it is the latter extract (which has a DM of at least 75%) of the water-soluble fraction by precipitation with alcohol or by multivalent salts. The extraction residue is dietary fiber.
