An enzyme hydrolysis of a cruor haemolysate is conducted with a proteolytic enzyme working at pH 4 (pepsin); the reaction product is drawn off continuously and brought into an ultrafiltration zone (7) comprising inorganic ultrafiltration membranes (8) which have a cutoff threshold enabling them to retain the said enzyme and haemoglobin; a permeate is drawn off continuously, representing a soluble, required fraction which has an iron content /= 0.25 mg or 0.50 mg per g of s.m. before and after desalting respectively; the retentate which represents an insoluble required fraction, whose iron content is /= 1% by weight of the s.m. is collected. This retentate can be precipitated at acidic pH or centrifuged, resulting in soluble and insoluble haeminic fractions, or else may be subjected to an enzyme hydrolysis (Alcalase), with ultrafiltration, giving a retentate precipitated at acidic pH.
