PURPOSE:To obtain a flavoring and coloring agent having a unique flavor and color by subjecting rice KOJI (yeast) to parching treatment. CONSTITUTION:The objective flavoring and coloring agent is obtained by subjecting rice KOJI to parching treatment at preferably 150-200 deg.C for 1-3hr or further extracting the resultant KOJI with hydrous ethanol.
