摘要

PURPOSE:To increase efficiency of lactic acid fermentation by synthesizing a plasmid which is derived from a bacterium belonging to Acetobacter and contains a structural gene of cell membrane bond type alcohol dehydrogenase complex having about 7.0 kilo base molecular size. CONSTITUTION:Acetic acid bacteria belonging to the genus Acetobacter or Gluconobacter are transformed by using a plasmid which is derived from a bacterium belonging to Acetobacter and contains a structural gene of cell membrane bond type alcohol dehydrogenase complex having about 7.0 kilo base molecular size shown by formula I. The transformed acetic acid bacteria are cultured to give a cell membrane bond type alcohol dehydrogenase(ADH). Efficiency of acetic acid fermentation can be raised by using the above- mentioned acetic acid bacteria, ADH complex can be readily extracted from the acetic acid bacteria, purified and the enzyme can be utilized for alcohol determination.
