PURPOSE:To obtain oil drop-in-water type emulsion for a pickling solution having high content of edible oils and fats and excellent emulsifying stability containing edible oils and fats in a specific range of content and polyglycerin fatty acid ester having higher than a specific HLB. CONSTITUTION:The above-mentioned oil drop-in-water type emulsion has a high content of edible oils and fats as 40-65wt.% and =11 HLB of polyglycerin fatty acid ester. Although oils and fats of natural animal and plant well-known as edible use may be used as said edible oils and fats, oils and fats derived from animals such as lard, beef tallow or butterfat is preferable in accordance with an object to improve deliciousness of edible processed products. On the other hand, monoester of polyglycerin and fatty acid having =11, especially =13 HLB is used as the polyglycerin fatty acid ester. Furthermore, as the polyglycerin, polyglycerin having 2-16 degree of polymerization is used. Finally, content of polyglycerin fatty acid ester in said emulsion is 0.05-3wt.%.
