A stream of liq. from a brewing process is filtered by a set of microfiltration membranes each consisting of a rotating tubular ceramic membrane, with a pore dia. of 0.05-5 microns (pref. 0.2 microns). As the liq. flows tangentially over the membranes, surplus yeast is deposited on the filter surface, while the filtrate consists of beer. During cleaning periods, the interconnecting piping system is drained, and collected yeast is flushed away by pressurised hot water applied from the filtrate side at a temp. of 60 deg.C or more, (pref. 75-90 deg.C). Preliminary drainage is provided in the piping by a stream of inert gas, pref. CO2, or air, which may alternate with clean water. ADVANTAGE - Lost prodn. time due to cleaning is reduced.
