The method comprises subjecting gyle, which is obtained from a mash, to a temperature treatment, separating hot sludge from the treated gyle, and obtaining beer from the gyle after hot trub separation by fermentation. During the brewing process, an aqueous fluid is separately mixed with a hops product and heated to isomerization of the bitterns and the pretreated fluid is subsequently added to the gyle. The fluid is heated at a temperature above the atmospheric boiling temperature during the temperature treatment of the gyle for 5-90 minutes. The method comprises subjecting gyle, which is obtained from a mash, to a temperature treatment, separating hot sludge from the treated gyle, and obtaining beer from the gyle after hot trub separation by fermentation. During the brewing process, an aqueous fluid is separately mixed with a hops product and heated to isomerization of the bitterns and the pretreated fluid is subsequently added to the gyle. The fluid is heated at a temperature above the atmospheric boiling temperature during the temperature treatment of the gyle for 5-90 minutes and is homogenously mixed with the hops product. The fluid is used with a pH value of greater than 5. The fluid is heated at a high temperature in such a way that a maximum end concentration reachable under consideration of the act of the reaction technique results an isomerisation product in the time of the temperature treatment of the gyle. A gyle partial stream is obtained from the gyle as aqueous fluid before the temperature treatment. The gyle partial stream is obtained as fluid for covering. The fluid is heated in a closed container (20) and then partially transported in its flow condition. The container is opened after heating under pressure reduction and the remaining fluid is introduced into the gyle. The fluid is boiled. Rinsing is carried out with a further gyle partial stream in the form of a solid-fluid extraction during or after the supply of pretreated fluid to the gyle. The solid-fluid extraction is carried out in the form of a displacement process. The hops product is pressed out for defluidizing. The pretreated fluid of the flowable gyle is carried out before the hot trub separation. The fluid is added to the hops product with solid material such as hops extract or the solid material is partially separated from the fluid and the pretreated fluid of the gyle is brought after the hot trub separation. The fluid is added to the hops product, which corresponds to the requirement of the German purity law. An independent claim is included for a device for the production of beer.
