PURPOSE: To efficiently obtain the title rice cracker having excellent flavor and commercial value by turning over and transporting dough of rice cracker and broiling the dough with charcoal fires in fire beds. ;CONSTITUTION: A broiling net 2 having placed dough of rice cracker is transported while successively turning over the net. Plural fire beds 5 are arranged side by side at the lower part of the reversing and transporting path, the dough of rice cracker in reversing and transporting is broiled by heating power of the charcoal fires in the fire beds 5 while being turning over the dough and the surface and the back of the dough are repeatedly broiled.
