PURPOSE: To obtain the subject saccharides for cake production having mild sweetness, low hygroscopic property and high heat stability by reacting an enzyme having α-amylase activity and pullulanase activity and derived from a strain of the variety of genus Clostridium with starches. ;CONSTITUTION: In a method for producing maltose and maltotriose by reacting an enzyme with starch or starch hydrolyzate at ≥60°C and pH 4-6.5, an enzyme having α-amylase active group and pullulanase active group in entirely the same protein molecule, having action of decomposing starch powder to maltose and maltotriose by these active groups, derived from Clostridium thermohydrosulfuricum variety strains, having 185,000±35,000 relative molecular weight determined by gradient gel electrophoresis in the presence of sodium dodecylsulfate, having 80-90°C suitable temperature and suitable pH which is 5-6 at 85°C and 4.5-5.5 at 60°C in both enzyme active groups is used as the enzyme.;COPYRIGHT: (C)1993,JPO
