PURPOSE:To obtain a refined SAKE (rice wine), fruit juice or miscellaneous liqour having improved body and high glycerol content by carrying out fermentation with a yeast deficient or deleted in alcohol dehydrogenase gene thereof (part thereof). CONSTITUTION:Fermentation is carried out by using a yeast (preferably one having resistance to allyl alcohol pyrazole), deficient or deleted in alcohol dehydrogenase gene thereof (part thereof) to give the objective refined SAKE, fruit wine or miscellaneous liquor having high glycerol content. Yeast having low alcohol production ability is preferable as the yeast.
