PURPOSE: To obtain a new microbial strain capable of performing vigorous lactic acid fermentation even in an environment having high salt concentration compared with the fermentation attainable by the separate use of the original strains by fusing a cell of a microbial strain belonging to genus Lactobacillus to a cell of a microbial strain belonging to Pediococcus halophilus. ;CONSTITUTION: The objective microorganism F-6 strain, etc., is produced by forming protoplast of preferably Lactobacillus plantarum No.14 strain and Pediococcus halophilus No.8 strain, fusing both protoplast cells with each other, regenerating the cell wall in a hypertonic medium and selecting a microbial strain exhibiting vigorous growth in a medium having high salt concentration (e.g. sodium chloride concentration of 10-20%).;COPYRIGHT: (C)1993,JPO&Japio
