PURPOSE: To provide a new oligosaccharide oxidase useful for the determination of oligosaccharide and the production of oligosaccharide acid. ;CONSTITUTION: The objective oligosaccharide oxidase has a molecular weight of 5.8-6.44m10⁴, contains 1 molecule of FAD (flavine adenine dinucleotide) per 1 molecule of the oligosaccharide oxidase and has an isoelectric point of 4.2-4.4, an optimum pH of about 10 and an optimum temperature of about 50°C. The enzyme can be separated from the cultivation product obtained by cultivating a microbial strain capable of producing an oligosaccharide oxidase active to form an acid and hydrogen peroxide from an oligosaccharide and an enzyme by the hydrolysis corresponding to the oligosaccharide.;COPYRIGHT: (C)1993,JPO&Japio
