An apparatus for separating off the curd in plant for producing cheeses, particularly stringy cheeses such as mozzarella, bocconicini, scamorza, cacetto and the like, in which the corresponding tank where the curd is drained and matured is built so that it can be tilted upwards, upstream to downstream, about a horizontal axis, in that the curd is fed by carriage type dispensing means into the tiltable tank while the latter is in the horizontal position and in that, located at the downstream end of the tank, there are plate cutting means and rake means which are actuated alternately, one after the other, when the tank has been tilted upwards so that they cut and remove the curd in layers, allowing the latter to fall into the next apparatus in the plant production line.
