PURPOSE: To obtain a pickle of MOROMI (ingredient of say sauce) maintaining a characteristic flavor of pickle of MOROMI for a long period of time and high commercial value without precipitating tyrosine in packing a pickle of MOROMI of various kinds of packaging materials or shipping and displaying a pickle of MOROMI in a preserved state in MOROMI. ;CONSTITUTION: MOROMI for preserving edible roots is blended with 0.5-3.0wt.% based on MOROMI of cyclodextrin and edible roots are preserved in the MOROMI containing the cyclodextrin and aged. The aged pickle of MOROMI will not precipitate tyrosine when packed into various kinds of packaging materials or shipped and displayed in a preserved state in MOROMI, maintains a characteristic flavor of pickle of MOROMI for a long period of time and prevents reduction in commercial value.;COPYRIGHT: (C)1993,JPO&Japio
