A method for automatically shaping rolled-up pastry, comprising a piece of a virtually flat strip of pastry which has been rolled up to form a roll, comprises the shaping of a strip of pastry from a substantially continuous mass of dough, the strip of pastry being continuously advanced and preferably being at least partially covered with a spreading of one or more layers of gelatinous or foamy, viscous substance, such as custard or jam. According to the invention, the strip of pastry is continuously rolled up in the transverse direction to form a roll at its front end. Only then is the roll of pastry cut into separate pieces. This has the advantage that the rolling takes place in a continuous process. While the pastry is being rolled up, the coating cannot flow sideways out of the roll of pastry, making the rolling more hygienic and more suitable for automation. The invention also provides a device for the automatic shaping of rolled-up pastry using this method. This device comprises a conveyor belt which is flexible in the transverse direction, and belt-bending means which bend the conveyor belt in such a manner that, during the continuous movement, they continuously roll up the strip of pastry into a roll.
