A process and apparatus serving for the treatment of must, especially red wine must. The must is placed into a vessel (10) and at least one physical parameter of the must is determined. A course of fermentation of the must is regulated as a function of the parameter. The must is treated by the pressure release process. The pressure in the vessel (10) is determined by a pressure sensor (22) and is regulated by a control apparatus (30) via a pressure-release valve (24) of the vessel (10) (Figure 1). IMAGE
