The invention relates to a process for the removal of nitrates of the water to be used as potable water, characterized in that it consists in subjecting the raw water to be treated to the action of a plurality of purifying means to the membranes, particularly of the units of electrodialysis (1) to (6) preferably of the type with a polarity inversion, arranged in series so as to enable said unit to be progressively the water so as to bring the concentration of the nitrates and other ions at least in the desired range, such as the limits defined by the legal standards relating to the drinking water, and then concentrated in a single flow décharqe water coming out of the units of electrodialysis and then subjecting the flow of discharge concentrated to a treatment of biological denitrification, so as to obtain the water discharge, the content of nitrates and other ions is within the limits set by the standards relating to the waste water.
