P The invention relates to a process for removing nitrates from water intended to be used as drinking water, characterized in that it consists in subjecting the raw water to be treated to the action of a plurality of means membrane purifiers, particularly electrodialysis units (1) to (6) preferably of the reverse polarity type, arranged in series so as to allow said unit to progressively purify the water until the concentration of nitrates and other ions at least within the desired limits, such as the limits provided for by legal standards concerning drinking water, then concentrating in a single stream the discharge waters leaving said electrodialysis units and then subjecting the discharge stream concentrated in a biological denitrification treatment, so as to obtain landfill water whose content of nitrates and other ions is within the limits established by the standards con surrounding landfill water. /P
