PURPOSE: To obtain an animal food having excellent appearance and sufficient flavor of MISO (fermented soybean paste). ;CONSTITUTION: MISO essence, a concentrate of extracted solution of MISO with water is contained in an animal food such as fishes and shellfishes or animal meat to give a MISO essence-containing animal food. Rice MISO and/or wheat MISO is extracted with warm water, its filtrate is concentrated or desalted and concentrated to give MISO essence and the MISO essence is added to an animal food ingredient such as fishes and shellfishes or animal meat to produce the MISO essence-containing animal food.
