YAMLIKE SLICE OF MUSHROOMS AND ITS PRODUCTION

PURPOSE: To obtain a new food material capable of facilitating the reconstitution of an active ingredient of dried mushrooms. ;CONSTITUTION: This method for producing a yamlike slice of mushrooms is to boil Lentinus edodes Sing., add gelatin thereto, treat the resultant Lentinus edodes Sing. with vinegar so as to prevent the putrefaction, dip the prepared Lentinus edodes Sing. in a seasoning liquid such as a soup stock of bonito or spray the soup stock thereon, thereby season the Lentinus edodes Sing., then place the obtained Lentinus edodes Sing. in a box-shaped frame mold, press form the Lentinus edodes Sing. with a press, shave off the formed block with a cemented carbide blade and thereby provide an ultrathin yamlike slice having ≤0.2mm thickness.
