PURPOSE: To provide a method for sterilizing rice before cooking and a method for cooking the sterilized rice with a container in order to cook the sterilized rice in a large amount in good production efficiency. ;CONSTITUTION: Rice is washed with a rice-washing machine using jet air bubbles and water having a water cluster number of approximately 10 to release and remove rice bran, oils and bacteria such as bacteria belonging to the Bacillus from the surfaces of the rice grains. Remaining bacteria are reduced in an immersion tank containing a pH-controlling agent added thereto. The treated rice is measured and subsequently charged together with cooking water into a container. The container is covered with the lid, and subsequently transferred in a steam-cooking machine for a prescribed time to cook the rice. The cooked rice is steamed with a steaming machine and subsequently transferred into a clean room. The lid is removed, and the cooked rice is subjected to a vacuum deaeration. The container is again covered with a lid, charged with an inert gas, sealed, and subsequently cooled to finish the rice into the sterilized cooked rice.;COPYRIGHT: (C)1995,JPO
