PURPOSE: To obtain an unique and delicious Japanese-style confection having the characteristics of yam, while effectively utilizing the defective products of the yam without wasting the defective products. ;CONSTITUTION: A method for producing a Japanese-style confection comprises steaming a raw yam until its viscosity is removed, mixing the steamed yam with a prescribed amount of starch, kneading the mixture, arranging the obtained confection raw material into a prescribed size and a prescribed shape, and subsequently heating the surface of the produced confection intermediate product.;COPYRIGHT: (C)1995,JPO
