The present invention relates to a process for preparing cooked and packaged polenta. The process, part of which takes place in a sterile environment, comprises the following operational stages: - a first stage in which the corn flour and pre-salted water are metered and mixed together; - a second steam-cooking stage; - a third stage in which the cooked polenta is maintained at a high temperature; - a fourth stage in which the polenta is metered into tins of a given volume; - a fifth stage in which the polenta is cooled; - a sixth stage in which the polenta is sterilized by means of ultraviolet radiation; - a seventh stage in which the set polenta is removed from the tins; and - an eighth packing stage. A further stage can be provided after the seventh operational stage, in which the polenta is cut into slices of given dimensions.
