FRUIT JUICE CONTAINING FRUIT POLYPHENOL, ITS PRODUCTION ANTIOXIDANT, HYPOTENSIVE AGENT, AGENT FOR ANTIMUTAGENIC ACTION, SUPPRESSING AGENT FOR ALLERGY, ANTICARIOUS AGENT AND DEODORANT

PURPOSE: To obtain a fruit juice having antioxidant activities, inhibiting activities against angiotensin I converting enzymes, antimutagenic actions, inhibiting activities against hyaluronidases, deodorant actions, etc., by pressing and/or extracting a juice from an unripe one of fruits belonging to the family Rosaceae. CONSTITUTION: This fruit juice is obtained by pressing and/or extracting a juice from an unripe one of fruits belonging to the family Rosaceae (preferably an apple). For example, a method for crushing or pressing the washed raw material while adding an antioxidant such as vitamin C, providing a pressed fruit juice, then adding a pectin hydrolase thereto, subsequently affording a clear fruit juice according to a means such as centrifugation or filtration is cited as the method for pressing the juice. For example, a method for mixing the washed raw material with an alcohol, crushing the raw material, then extracting the raw material while heating and refluxing the mixture, subsequently concentrating the extract under reduced pressure, then carrying out the centrifugation and filtration and providing a clear extract solution is cited as the method for extraction. The resultant fruit juice contains polyphenols such as caffeic acid derivatives, p-cumaric acid derivatives, flavonols or condensed type tannins.
