Within the procedure consisting of peeling washed raw potatoes, defected potato elimination, subsequent cleaning during classification of eliminated defected potatoes, cooking, cooling cooked potatoes and breaking them into small pieces, according to the invention, potatoes are cut roughly into pieces having shapes of right parallelepipeds, cubes or batons with border lengths 5-30 mm; the rough cutting is followed by elimination of defected pieces, with rough cutting directly following potato peeling after potatoes have been cooked and cooled. The apparatus for potato mashing is constructed like the well-known apparatus for cutting meat having in the cylindrical housing co-axially and axially inserted one after another the transport snail (2), knife and perforated plate (5), so that between the perforated plate (5) and the transport snail (2) a mashing and grating plate (10), which is used for potato mashing through the perforated plate (5), is placed instead of a knife.
