The present invention provides a flavor oil obtained by adding an emulsifier to a sorbitol solution and adding the mixture of the liquid red pepper seed oil and soybean lecithin, which is sufficiently stirred, to emulsify the flavor oil and a process for producing the same. The water-soluble flavor oil of the present invention obtained by using the red pepper seed oil as a raw material is excellent in taste and flavor, and is useful for a noodle or baking.
