The present invention relates to stable protein compositions. The present invention also relates to a method for preparing a composition which stabilizes a protein from heat-induced aggregation, denaturation and loss of activity by contacting a protein capable of transitioning to a molten globular state with an ohmic charge lipid vesicle. Protein: phospholipid complexes directly stabilize the secondary and tertiary structures of proteins, and the compositions are useful as hot formulations and new release mediators.
