The yolk (2), sepd. from the egg white (13), is whipped up with sugar (6.1) and the aid of heat. This takes place in a water bath (3.1) and/or at a temp. of 60 deg C.. It is then cooled and beaten cold, at room temp., to arrive at a consistency similar to mayonnaise. The white (13) is whipped up with sugar (6.2). The beaten masses (2,13) are mixed with wheat flour and potato flour (14,15) to make the dough. Biscuits may be sealed in e.g. expanded polystyrene package.
