The invention relates to a process for the identification of a fruit genus, species or variety. It relates to a process which comprises a) the amplification of DNA sequences in nucleic acids present in the tissue or the juice by means of a polymerase chain reaction, b) the comparison of the DNA obtained with that which is obtained from a tissue or juice of fruits of a known genus, species or variety, and c) the examination of the presence of DNA elements from a known genus, species or variety based on the presence of tissues or juice derived from this genus, this species or this variety. The nucleic acids are analysed by means of a hybridisation probe in which the observation of hybridisation of the nucleic acids of fruits with a given probe is compared with that of the nucleic acid of known genus, species or variety, and the comparison is used for the determination of the probable identity of the fruit.
