PURPOSE: To provide a new bacterial strain of Botrytis cinerea genus excellent in spore productivity, substrate specificity for organic acids and glycerol producing properties, and affording a noble rot wine having an excellent flavor by preparing a juice from noble rot grapes obtained by inoculating it to grapes, and fermenting the juice. ;CONSTITUTION: The characteristics of this new Botrytis cinerea SBT7251 (FERMP-14755) capable of affording a noble rot wine having an excellent flavor by preparing a juice from noble rot grapes obtained by inoculating it to grapes and fermenting the juice, comprise containing ≥10×106/ml number of spores in 1ml suspension liquid obtained by inoculating this bacterial strain to a slant agar medium prepared by pouring and disinfecting 25ml medium made by adding 5g yeast extract per 1 litter diluted juice to the juice of grapes diluted by 2 folds, adjusting to pH4.5 and adding to an agar, incubating at 20°C for 3 weeks and suspending the obtained spores in 15ml sterilized physiological saline, and exhibiting ≥22% and ≥29% decomposition rates of tartaric acid and malic acid respectively and ≥1.8g/L amount of glycerol production after incubating the strain in a YM modified medium of 15% sugar concentration containing tartaric acid and malic acid at 20°C for 1 week.;COPYRIGHT: (C)1996,JPO
