PURPOSE: To efficiently obtain an edible fungus such as Lentinus edodes Sing. or Auricularia auricula, capable of accelerating the development of buds, excellent in productivity and quality by cultivating the edible fungus with a culture material composed of a herbaceous plant, fermented with a fermenting fungus and suitable for cultivating the edible fungus and an inorganic salt, etc. CONSTITUTION: This method for cultivating an edible fungus comprises cultivation steps for raising a herbaceous plant suitable for cultivating the edible fungus such as Dicranopteris dicnotoma (Thunh) Bernh., collecting and processing the herbaceous plant suitable for cultivating the edible fungus, preparing a culture medium for a fermenting fungus, raising and producing the fermenting fungus, preparing a raw material for cultivating the edible fungus such as sawdust or corn and carrying out the fermentation, etc., of the herbaceous plant suitable for cultivating the edible fungus. The edible fungus is cultivated by using a culture material, composed of the herbaceous plant, suitable for cultivating the edible fungus and fermented with the fermenting fungus and an inorganic salt, etc., and having a high nutritive value. Furthermore, the culture material for the edible fungus (a dried material) preferably contains 49-98% herbaceous plant suitable for cultivating the edible fungus, 2-4% inorganic salts and 0-49% sawdust and trunks, stems, seed shells, etc., of crops.
