摘要

Preface Edible fungi is one large resource of several pharmacologically active molecules with long history in use of food and medicine.The substances in the edible fungus not only satisfy our senses,but also benefit to our health.The research on these functional components and their working mechanisms would improve the full understanding of health promoting properties of edible fungus and contribute to the great use of the resources and protection for human health.
