PROBLEM TO BE SOLVED: To obtain an antioxidant excellent in antioxidant action for polybasic unsatd. fatty acids or oil and fats contg. polybasic unsatd. fatty acids, excellent in solubility in liq. oils, and free from a fear of coloring oils and fats even added thereto. ;SOLUTION: An antioxidant for polybasic unsatd. fatty acids or oils and fats contg. polybasic unsatd. fatty acids comprises fatty esters of sucrose, wherein the fatty acids of the esters comprise 20-80wt.% 8-22C satd. fatty acids and 80-20wt.% 8-22C unsatd. fatty acids, and the acreage degree of substitution of sucrose with the fatty acids is 2 to 6.;COPYRIGHT: (C)1997,JPO
