PURPOSE:To obtain the subject stable composition storable over a long period without causing change such as discoloration only by using an extremely small amount of an additive by adding a specific amount of an alkali metal compound ar an alkaline-earth metal compound to ascorbic acid. CONSTITUTION:Ascorbic acid is added with about =100ppm (preferably 1-10ppm) of an alkali metal compound or an alkaline-earth metal compound. The composition is especially suitable for the production of powder. The addition of the metal compound to the ascorbic acid crystal is carried out preferably by sprinkling a solution of the above metal compound (e.g., aqueous solution or a solution in an alcohol such as methanol), draining the liquid by suction filtration or centrifugal separation and drying the solution to deposit the metal compound on the surface of the crystal. The concentration of the metal compound solution is preferably about 0.01-5W/V%.
