PURPOSE: To produce ascorbic acid-2-phosphate or ascorbic acid-2-sulfonate widely useful for cosmetics, foods, medicines, etc., as a stable type ascorbic acid derivative on an industrial scale, readily, in high quality and in high yield. ;CONSTITUTION: An aqueous solution containing ascorbic acid-2-phosphate or ascorbic acid-2-sulfonate (hereinafter abbreviated as ascorbic acid derivative) is treated with a porous adsorbent such as activated carbon to adsorb the ascorbic acid derivative on the adsorbent. The ascorbic acid derivative is diluted with a basic aqueous solution containing a corresponding metal ion or an ammonium ion which may contain a substituent group required for forming the fixed ascorbic acid derivative to produce the metal salt of the ascorbic acid derivative or the ammonium salt which may contain the substituent group of the ascorbic acid derivative.;COPYRIGHT: (C)1996,JPO
