A water-soluble, generally-crystalline, mono- and/ordicalcium fumarate is included at a low level (less than2% by weight) in a dry food mix, such as a powderedbeverage mix. The calcium fumarate will have an averageparticle size of 35 microns or less and can function asan anticaking or flow agent. The per serving use levelwill be below that suitable for calcium fortification andis typically less than 50 mg per serving which is a mere5% of the U.S. Percent Daily Value for calcium of1,000 mg.
