SUBSTANCE: method involves separation and pasteurization of whey; lactose hydrolyzation in whey by ferment preparation of β-haloctocidase up to 50% of hydrolysis rate, and concentration of whey. Hydrolyzed whey is treated by alkali reagent up to acidity of prepared product not more 250 T. Whey concentration is carried out before hydrolysis of lactose up to amount of dry substances 18-22%, while treatment by alkali reagent, up to acidity not more 95 T. Additional concentration of hydrolyzed whey is carried out up to amount of dry substances 38-62%. Used for whey hydrolysis is ferment preparation of immobilized b-haloctocidase, and concentration of hydrolyzed whey is carried out after its treatment with alkali reagent up to amount of dry substances 18-62%.
