FIELD: food and dairy industries. SUBSTANCE: proposed method is based on lactose hydrolysis with enzyme preparations of soluble or immobilized β--galactosidase and deoxidation with alkaline reagents. Method ensures to obtain sugar substituents from acid whey that are serviceable in baked goods and confectionery articles production. EFFECT: improved method of production.
