PROBLEM TO BE SOLVED: To provide low-calorie chocolate products which are delicious and can be easily produced in conventional production processes without using special oils or fats. ;SOLUTION: This low-fat and low-calorie chocolate contains oil and fat by 19-25wt.%, lecithin, polyglycerin condensed ricinoleate, sugar and specified low absorption sugar. The chocolate is produced by using as the essential components, 19 to 25wt.% oil and fat, lecithin, polyglycerin condensed ricinoleate, sugar and specified low absorption sugar. These materials are treated by mixing, rolling and conching to produce chocolate. In the mixing process, the whole amt. of oil and fat component and the whole amt. of lecithin are added.;COPYRIGHT: (C)1998,JPO
