THIS INVENTION IS RELATED TO RECOMBINANT DNA TECHNOLOGY. SPECIFICALLY, THIS INVENTION IS RELATED TO NEW RECOMBINANT YEAST STRAINS TRANSFORMED WITH XYLOSA REDUCTASE ENZYME AND / OR XYLITOL DEHYDROGENASE GENES. A STRAIN OF YEAST TRANSFORMED WITH THE XYLOSA REDUCTASE GENE IS ABLE TO REDUCE XYLOSA OR XYLITOL AND, THEREFORE, TO PRODUCE XYLITOL IN VIVO. IF THESE TWO GENES ARE TRANSFORMED INTO A YEAST STRAIN, THE RESULTING STRAIN MAY PRODUCE ETHANOL IN A XYLOSA-CONTAINING MEDIA DURING FERMENTATION. IN ADDITION, SUCH NEW YEAST STRAINS MAY EXPRESS BOTH ENZYMES CITED. THE XYLOSE REDUCTASE PRODUCED BY THESE STRAINS CAN BE USED IN AN ENZYMATIC PROCESS FOR THE PRODUCTION OF XYLITOL IN VITRO.
