There are disclosed an immobilized enzymepreparation obtained by bringing an enzyme capable ofproducing D-[err]-amino acids by hydrolysis of N-carbamyl-D-[err]-amino acids with a solid support in the presence of anantioxydant; and a process for producing D-[err]-amino acidsincluding the step of bringing the enzyme preparation incontact with N-carbamyl-D-[err]-amino acids.
