The present invention relates to a method for producing ginkgo biloba powder tea. More specifically, the present invention relates to a method for producing semi-fermented and non-fermented ginkgo biloba powder tea, which removes 2-hexenal which is a harmful component of ginkgo biloba and increases palatability. In the present invention, the selected raw ginkgo leaves are fermented or the fermentation process is omitted, followed by primary roasting and salting, followed by heating and drying by blowing hot nitrogen gas to repeat cutting and grinding to 100 to 400 mesh. After making the gingko leaf powder of the second fry, and then remove the small tea powder of 400 mesh or more, it provides a method for producing semi-fermented and non-fermented ginkgo biloba powder tea. According to the present invention, by removing the harmful components of the ginkgo biloba leaves, by reducing the fishy smell and bitter taste of the ginkgo biloba leaves, ginkgo biloba powder tea excellent in taste and aroma and pale green taste can be produced.
