Stabilizing, thickening and gelling agent for sour milk comprises 2-25 wt.% gellan gum and 75-98 wt.% modified starch, optionally mixed with a pharmaceutical-acceptable carrier, which is added to milk produced for lactic fermentation, before or during inoculation with lactic acid micro-organisms. Also claimed are stabilized, thickened or gelled acid milk products produced by lactic fermentation of a milk medium containing this composition.
