SOLUTION: This flavor and taste-improving agent includes one or two or more kinds of flavor components selected from the group consisting of trimethylamine, 1-methoxy-2-propanol, n-butyl alcohol, 1-ethoxy-2-propanol, 2-ethoxyethanol, N,N-dimethyl-2-formamide, 4-hydroxy-4-methyl-2-pentanone, 2-n-butoxy-ethanol, 5-ethyl-2-methylpyridine, 2-butanone oxime, 3-methoxy-3- methylbutanol, furfural, 2-ethylhexyl alcohol, 1-heptadecene, heptanal, 4- methoxyhepatanone, nonanal and 2-butoxyethanol.
